Cheese Bits Pasta Primavera
Fresh vegetables and Cheese Bits tossed with pasta in a light garlic sauce

Ingredients

1 lb pasta (penne or fusilli)
•
2 cups Cheese Bits Original Pearls
•
2 cups broccoli florets
•
1 cup cherry tomatoes, halved
•
1 bell pepper, sliced
•
1 zucchini, sliced
•
4 cloves garlic, minced
•
1/4 cup olive oil
•
1/2 cup pasta water
•
Fresh basil and Parmesan
•
Salt and pepper to taste
Instructions

Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.

While pasta cooks, heat olive oil in a large skillet over medium heat.

Add garlic and sauté for 30 seconds until fragrant.

Add broccoli, bell pepper, and zucchini. Cook for 5-7 minutes until tender-crisp.

Add cherry tomatoes and cook for 2 more minutes.

Toss cooked pasta with vegetables, adding pasta water to create a light sauce.

Stir in Cheese Bits pearls, season with salt and pepper, and garnish with fresh basil and Parmesan.
