Ingredients

  • 4 large bell peppers (any color)
  • 2 cups Cheese Bits Original Pearls
  • 1 cup cooked quinoa
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Fresh cilantro
  • Salt and pepper to taste

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut tops off peppers and remove seeds and membranes.
  3. 3In a large bowl, combine quinoa, black beans, corn, tomatoes, onion, garlic, and spices.
  4. 4Stir in 1 cup of Cheese Bits pearls.
  5. 5Stuff each pepper with the quinoa mixture and place in a baking dish.
  6. 6Cover with foil and bake for 30 minutes.
  7. 7Remove foil, top with remaining Cheese Bits, and bake uncovered for 10 more minutes.
  8. 8Garnish with fresh cilantro and serve hot.
