Cheese Bits Stuffed Peppers
Bell peppers filled with quinoa, vegetables, and melted Cheese Bits

Ingredients
•
4 large bell peppers (any color)
•
2 cups Cheese Bits Original Pearls
•
1 cup cooked quinoa
•
1 can black beans, drained
•
1 cup corn kernels
•
1 cup diced tomatoes
•
1 onion, diced
•
2 cloves garlic, minced
•
1 tsp cumin
•
1 tsp paprika
•
Fresh cilantro
•
Salt and pepper to taste
Instructions

Preheat oven to 375°F (190°C).

Cut tops off peppers and remove seeds and membranes.

In a large bowl, combine quinoa, black beans, corn, tomatoes, onion, garlic, and spices.

Stir in 1 cup of Cheese Bits pearls.

Stuff each pepper with the quinoa mixture and place in a baking dish.

Cover with foil and bake for 30 minutes.

Remove foil, top with remaining Cheese Bits, and bake uncovered for 10 more minutes.

Garnish with fresh cilantro and serve hot.
